Ingredients
  • 4 Cups Kale, stems removed and finely chopped
  • 1 Cup Strawberries, hulled and sliced
  • 100g Goats Cheese, crumbled
  • 1/4 Cup Toasted Almonds or Walnuts (Optional)
  • 1/4 Cup Olive Oil
  • 2 tbsp Fresh Lemon Juice
  • 1 tbsp Honey or Maple Syrup
  • 1 tsp Lemon Zest
  • 1 tsp Poppy Seeds
  • Salt and cracked Black Pepper to taste

This Strawberry and Kale salad is fresh, vibrant, and full of flavour. Sweet berries, creamy goat’s cheese, and a zesty lemon poppy seed dressing come together for a perfectly balanced dish. Ideal as a light lunch, side salad, or colourful addition to any spread.

Method:

  • Place the chopped kale into a large bowl. Drizzle with a small amount of olive oil and massage with clean hands for 1–2 minutes until softened and deep green in colour.
  • Add the strawberries, blueberries, and toasted nuts (if using) to the bowl.
  • In a small jar or bowl, whisk together the olive oil, lemon juice, honey (or maple syrup), lemon zest, poppy seeds, salt, and pepper until well combined.
  • Pour the dressing over the salad and toss gently to coat.
  • Top with crumbled goat’s cheese just before serving.
