Ingredients
  • 1 Large Baguette, Sliced into 24 Pieces
  • 4 Peaches, halved and pits removed
  • 1/3 cup Red Onion, finely chopped
  • 1 clove Garlic, minced
  • 1/2 cup Fresh Basil, finely chopped
  • 113g Goats Cheese
  • 1 tbsp Olive Oil
  • 1 tsp Honey

Sweet, juicy peaches meet creamy goat cheese, fragrant basil, and a touch of honey on crisp baguette slices. This peach bruschetta is a simple yet elegant appetizer that’s bursting with summer flavors. Perfect for entertaining, brunch, or a light, fresh snack.

Method:

  • Preheat the oven to 180°C. Arrange baguette slices on a baking tray and lightly brush with half of the olive oil. Toast in the oven for 8–10 minutes until golden and crisp.
  • While the bread is toasting, dice 2 of the peaches into small pieces. Combine with red onion, garlic, and half of the basil in a small bowl. Set aside.
  • Spread the goat cheese evenly over the toasted baguette slices.
  • Top each slice with the peach – onion mixture.
  • Thinly slice the remaining 2 peach halves and arrange one slice on top of each slice.
  • Drizzle lightly with honey and the remaining olive oil, then sprinkle with the remaining fresh basil.
  • Serve immediately and enjoy!
