Ingredients
- 1 Large Baguette, Sliced into 24 Pieces
- 4 Peaches, halved and pits removed
- 1/3 cup Red Onion, finely chopped
- 1 clove Garlic, minced
- 1/2 cup Fresh Basil, finely chopped
- 113g Goats Cheese
- 1 tbsp Olive Oil
- 1 tsp Honey
Sweet, juicy peaches meet creamy goat cheese, fragrant basil, and a touch of honey on crisp baguette slices. This peach bruschetta is a simple yet elegant appetizer that’s bursting with summer flavors. Perfect for entertaining, brunch, or a light, fresh snack.

Method:
- Preheat the oven to 180°C. Arrange baguette slices on a baking tray and lightly brush with half of the olive oil. Toast in the oven for 8–10 minutes until golden and crisp.
- While the bread is toasting, dice 2 of the peaches into small pieces. Combine with red onion, garlic, and half of the basil in a small bowl. Set aside.
- Spread the goat cheese evenly over the toasted baguette slices.
- Top each slice with the peach – onion mixture.
- Thinly slice the remaining 2 peach halves and arrange one slice on top of each slice.
- Drizzle lightly with honey and the remaining olive oil, then sprinkle with the remaining fresh basil.
- Serve immediately and enjoy!
