Ingredients
  • 1 cup Jasmine Rice
  • 1 cup Coconut Milk
  • 1 cup Water
  • 2 tbsp Sugar (or Honey/Maple Syrup)
  • 1/4 tsp Salt
  • 1 Ripe Mango, peeled and sliced
  • Optional Toppings: Chia Seeds, Coconut Flakes, Nuts

This mango coconut rice is creamy, tropical, and naturally sweet, perfect as a dessert or a refreshing side dish. The combination of fragrant coconut rice and juicy mango makes it a simple yet indulgent treat. Ideal for summer gatherings, brunch, or a cozy dessert at home.

Method:

  • Rinse the rice under cold water until water runs clear.

  • In a medium saucepan, combine the rice, coconut milk, water, sugar, and salt. Bring to a gentle boil over medium heat.

  • Reduce the heat to low, cover, and simmer for 15–20 minutes, or until the rice is tender and liquid is absorbed.

  • Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.

  • Serve warm or chilled with sliced mango on top and optional toasted coconut flakes or fresh mint.
