- 5 Yellow Nectarines
- 400g Tomatoes (Mixed colour)
- 3 Handfuls of Mixed Salad Greens
- 1 Bag of Croutons
- 2 Buratta Balls
- 2 Handful of Basil Leaves
- 1 Handful of Mint Leaves
- 4 Tbsp Olive Oil
- Juice of Half an Orange
- 1 Tbsp Pistachio Nuts (Finely chopped)
- Pinchof Sea Salt
Juicy grilled nectarines and creamy burrata come together in this fresh, vibrant salad made for warm-weather dining. Instructions:
Prepare the Necatrines
- Preheat a grill or grill pan over medium-high heat. Brush the nectarines with a little olive oil and grill cut-side down for 2–3 minutes, until slightly charred. Set aside to cool slightly.
Make the Dressing
- In a small bowl, combine chopped basil, mint, olive oil, orange juice, pistachios, and a pinch of sea salt. Mix well.
Assemble the Salad
- In a large bowl or platter, layer the mixed greens, sliced tomatoes, and grilled nectarines. Tear the buratta over the top, scatter the croutons, and sprinkle with extra basil and mint leaves. Drizzle with herbdressing just before serving. Serve immediately as a refreshing starter, side or light lunch.
