- 1 - 2 Chicken breasts or Thighs
- 1 - 2 Tbsp Basil Pesto
- Handful of Chopped Sundried Tomatoes
- Handful of Rocket
- Alfalfa Sprouts
- Mozzarella
- 2 Tbsp Mayonaise (or Plain Greek Yoghurt)
- 1 Tbsp Finely Chopped Cilantro
- 1 Tbsp Finely Chopped Parsley
- 1 Tbsp Finely Chopped Dill
- 1 Minced Garlic Clove
- Juice of Half a Lemon
- Pinch of Sea Salt

Tender, juicy grilled chicken is layered with fresh basil pesto, tangy sundried tomatoes, creamy mozzarella, crisp arugula, and delicate alfalfa sprouts for a fresh, vibrant bite. Finished with a zesty lemon herb mayo and served on toasted Abbott’s Country Grain bread, every mouthful is a perfect balance of hearty, satisfying, and full of flavour. Ideal for a quick lunch, a picnic, or any time you want a sandwich that feels both wholesome and indulgent.

Instructions
- Prepare the chicken: Season chicken with salt and pepper, Grill in a pan until cooked through.
- Make the lemon herb mayo: Finely chop cilantro, parsley, and dill. Mince the garlic clove. Combine all ingredients in a small bowl and mix until well combined.
- Assemble the sandwich: Toast the bread. Spread lemon herb mayo on the bottom slice. Layer chicken, mozzarella, rocket, sundried tomatoes, and alfalfa sprouts. Spread basil pesto on the top slice.
