- 2 - 3 Ripe Bananas
- 5g Baking Soda
- 150g White Sugar
- 2 Large Eggs
- 204g Plain Flour (or Gluten-Free flour with Xanthan gum)
- 5ml Vanilla Extract
- 75g Butter, melted
- Pinch of salt

Instructions
- Preheat oven to 180°C and lightly grease or line a loaf tin.
- Mash bananas until just combined, then stir in the baking soda.
- Whisk eggs until frothy and melt the butter.
- Add melted butter, sugar, eggs, vanilla extract, and salt to the bananas. Stir until just combined.
- Gently stir in sifted flour until just combined, avoid overmixing.
- Bake for 50 minutes to 1 hour, or until a knife inserted into the centre comes out clean.
- Allow to cool completely before slicing and serving.
