Ingredients
  • 2 - 3 Ripe Bananas
  • 5g Baking Soda
  • 150g White Sugar
  • 2 Large Eggs
  • 204g Plain Flour (or Gluten-Free flour with Xanthan gum)
  • 5ml Vanilla Extract
  • 75g Butter, melted
  • Pinch of salt

Classic, comforting, and effortlessly delicious, this banana bread is moist, lightly sweet, and perfect for using up ripe bananas. It’s quick to make and even quicker to enjoy, and it works brilliantly with both regular and gluten-free flour.

Instructions

  • Preheat oven to 180°C and lightly grease or line a loaf tin.
  • Mash bananas until just combined, then stir in the baking soda.
  • Whisk eggs until frothy and melt the butter.
  • Add melted butter, sugar, eggs, vanilla extract, and salt to the bananas. Stir until just combined.
  • Gently stir in sifted flour until just combined, avoid overmixing.
  • Bake for 50 minutes to 1 hour, or until a knife inserted into the centre comes out clean.
  • Allow to cool completely before slicing and serving.

  • Swap half the white sugar for coconut sugar for a deeper flavor.
  • Add chopped walnuts or almonds for healthy fats and crunch.
  • For extra fibre, replace 1–2 tablespoons of flour with ground flaxseed.
