- 250g Butter (Melted)
- 1/2 Cup + 2 TBsp Maple Syrup
- 2 Tsp Vanilla Extract
- 225g Raspberries
- 225g Blueberries
- 225g Blackberries
- 2 - 3 TBsp Lemon Juice
These triple berry crumble bars are bursting with juicy raspberries, blackberries, and blueberries layered between a buttery crumble crust. Naturally sweetened with maple syrup and completely gluten-free, they’re the perfect balance of sweet, tart, and crisp. Ideal for dessert, afternoon tea, or a fruity grab and go snack.

Method:
- Preheat the oven to 175°C. Line a 23 × 33 cm slice tin with baking paper.
- In a large bowl, whisk together the flour, cornflour, baking powder, and sea salt.
- Stir in the melted butter, maple syrup, and vanilla until crumbly and combined.
- Press about two-thirds of the crumble mixture firmly into the prepared tin to form the base.
- In another bowl, gently combine the raspberries, blackberries, blueberries, cornflour, lemon juice, maple syrup, and vanilla.
- Spread the berry filling evenly over the base layer.
- Sprinkle the remaining crumble mixture over the berries.
- Bake for 40–45 minutes, until the top is golden and the berry filling is bubbling.
- Allow the bars to cool completely before slicing into squares.
