- 3 Large Eggs
- 55g Light Brown Sugar
- 65g Granulated Sugar
- 1tsp Vanilla Extract
- 65g All Purpose Flour
- 15g Cocoa Powder
- 1tsp Bakin Powder
- 1/2tsp Ground Coffee
- 1/4tsp Salt
- 75g Dark Chocolate (75%)
- 2 1/4 tsp Powdered Gelatine
- 45ml Fresh Lemon Juice
- 400g Fresh or Frozen Raspberries
- 100g Granulated Sugar
- 480ml Heavy Cream
- 125g Fresh Raspberries
- 50g Dark Chocolate Shavings
This Chocolate Raspberry Mousse Cake is rich, elegant, and beautifully balanced. A light chocolate sponge base is topped with silky raspberry mousse for the perfect blend of deep cocoa and bright berry flavor. Ideal for celebrations, dinner parties, or when you want an impressive yet refined dessert.

Method
Chocolate Sponge

Preheat oven to 180°C. Line the base of a 20 cm (8-inch) springform tin with baking paper.

In a bowl, whisk eggs, brown sugar, and granulated sugar until pale, thick, and fluffy (about 3–4 minutes).

Add vanilla and melted dark chocolate, gently folding to combine.

Sift in flour, cocoa powder, baking powder, espresso powder, and salt. Fold carefully until just combined.

Pour into the prepared tin and smooth the surface.

Bake for 12–15 minutes until set and springy to the touch. Cool completely in the tin.
Raspberry Mousse

Sprinkle gelatine over lemon juice and let bloom for 5 minutes.

Blend raspberries until smooth, then strain to remove seeds.

In a saucepan, gently heat raspberry purée with sugar until dissolved.

Add bloomed gelatine and stir until fully dissolved. Cool to room temperature.

Whip cold double cream to soft peaks.

Fold the cooled raspberry mixture into the whipped cream gently until smooth and airy.
Assembly

Pour the raspberry mousse over the cooled chocolate sponge base.

Smooth the top and refrigerate for at least 4 hours or until fully set.

Once set, remove from the tin and decorate with fresh raspberries and dark chocolate shavings before serving.
