Ingredients
- 3 Ripe Bananas, Mashed (about 1 1/2 Cups)
- 2 cups Rolled Oats
- 1/3 cup Honey or Maple Syrup
- 2 Large Eggs
- 1 tsp Baking Powder
- 1 tsp Vanilla Extract
- Pinch of fine Salt (optional)

Method
- Preheat the oven to 175°C. Line an 8 × 8-inch baking tin with parchment paper, leaving an overhang for easy removal.
- In a large bowl, mash the bananas until mostly smooth, leaving a few soft chunks for texture.
- Whisk in the eggs, honey (or maple syrup), and vanilla until the mixture looks glossy and well combined.
- Sprinkle over the rolled oats, baking powder, and salt. Fold gently until no dry patches remain.
- Transfer the mixture to the prepared tin and smooth the top evenly.
- Bake for 25–30 minutes, until the top is set and the edges are lightly golden.
- Allow to cool in the tin until warm, then lift out and slice into 12 bars.
