Ingredients
- 600g Lean Ground Beef
- 2 Medium Sweet Potatoes
- 1 avocado
- Juice of 1 lime
- 1 Cup Cottage Cheese
- 1 Brown Onion, Finely chopped
- 2 Tbsp Olive Oil
- 2 Tbsp Hot Honey
- Small Handfull Fresh Cilantro, Finely Chopped
- 1/2 Tsp Paprika
- 1 1/2 Tsp Garlic Powder (1 tsp for Taco Seasoning)
- 1/4 Tsp Cinnamon
- Salt and Pepper to Taste
- 1 Tsp Onion Powder
- 1 tsp Dried Oregano
- 2 Tsp Cumin Powder
- 1/4 Tsp Chilli Powder

Instructions:
- Roast the sweet potatoes: Preheat the oven to 200°C. Toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread evenly on a baking tray and roast for 40–45 minutes, turning halfway through, until golden and tender.
- Cook the onions: Heat the remaining olive oil in a large pan over medium heat. Add diced onion and cook until soft and translucent.
- Mix Homemade Taco Seasoning: Add Garlic powder, Onion Powder, Dried Oregano, Cumin Powder, Chilli Powder, Salt and Pepper to taste.
- Prepare the beef: Add ground beef to the pan and season with taco seasoning. Cook, breaking up the meat, until browned. Add a splash of water and simmer until the mixture thickens and develops rich flavour.
- Assemble the bowls: Layer roasted sweet potatoes, seasoned beef, sliced avocado, and cottage cheese in bowls.
- Add finishing touches: Drizzle with hot honey, sprinkle with chopped cilantro, and squeeze fresh lime over each bowl. Serve immediately.
